Not Your Paula Deen Fried Chicken!

My man cooks, that’s right. My man COOKS! He made this amazing guilt-free fried chicken the other night and I had to share it with y’all. The whole cookbook is yummy and the proceeds of it’s sale good to a good cause. It’ll taste good enough for Paula, but without all the diabetes.

31/2 C. Corn Flakes cereal

2 T. sesame seeds

3/4 tsp. cayenne pepper

1/2 tsp. garlic powder

2 egg whites

1 c. lowfat plain yogurt

1/2 tsp. salt

Olive Oil cooking spray

4 boneless, skinless chicken breasts

1/2 tsp. dried thyme

Preheat oven to 375. Lightly spray a baking sheet with cooking spray. Place cereal in food processor and pulse until finely ground. Combine crumb mixture with sesame seeds, cayenne pepper, thyme, and garlic powder in a large mixing bowl. In a separate large mixing bowl, combine egg whites, yogurt, and salt. Add chicken pieces that have been rinsed and patted dry to the yogurt mixture. One at a time, dip the chicken pieces in the dry mixture, packing crumbs onto chicken. Arrange the chicken on the prepared baking sheet and spray lightly with the cooking spray. Bake 45 to 60 minutes, or until juices run clear when chicken is pierced with a knife. Enjoy!
